Home-made Idiyappam

We had a refrigerator fiasco this weekend- as a result, we were trying to finish up many things from the freezer. One of the things in the freezer was a packet of frozen idiyappam from the store, which actually tastes really good. So when we went through that packet pretty quickly, I decided to try my hand at making some idiyappam at home.. We had the idiyappam/sevai-maker from our most recent trip to India, so it was just a matter of trying it out!

Ingredients:
Rice flour- 1 cup
water
salt to taste
coconut

Dry-roast the rice flour until the flour doesn't stick to your fingers, or in other words, until it has lost any remaining moisture.
Boil some water with salt to taste. Add this to the rice flour little by little and mix it up with a spoon/spatula. Make a soft dough (maybe about the same consistency as kozhukkattai outer layer) and put in the sevai maker. I used the insert with the smallest holes so the threads would be very thin.
Puzhinja-fy one layer (sort of round-ish), and then add some coconut. Top with a second layer of rice flour mix squeezed out from the idiyappam maker. If required, do this once more so there are 3 layers. I made some for Vihaan in the idli thattu (top left) and some for us in the larger steamer (top).  Steam it in the idli cooker for about 15 minutes.
We had this with chole (passed off as our kadala curry:))
